Directions
1 Preheat oven to 350F and lightly grease two baking trays. Put the apricots in a bowl, pour over the boiling water and allow to soak for 10 minutes. 2 While the mixture cools, combine the oats, flour, oat bran, sugar, walnuts, baking powder and spices in a separate large bowl. 3 Beat the egg white until stiff peaks begin to form, and then fold in the cooled apricot mixture. Add the oil, then mix into the dry ingredients. 4 To bake, drop spoonfuls of the mixture onto the prepared baking trays and then bake until lightly brown, roughly 12 to 15 minutes. Let cool for 5 minutes before removing them from the tray and then transfer to a wire cooling rack for further cooling before serving.
