Ingredients | Makes Servings
1 Cauliflower, head, medium, 5" - 6", fresh
1 medium garlic cloves
1 fresh leeks , white only, split in 4 pieces (washed well)
1 tbsp salted butter
1 tbsp Butter Substitute, sprinkles (such as Butter Buds)
1 pinch salt and pepper , to taste

Directions
1 Cut up the cauliflower into small pieces.
2 Steam the cauliflower, garlic and sliced leek unitl completely tender, approximately 20 - 30 minutes.
3 While still hot, puree the mixture along with the butter, salt, and pepper in a food processor until it resembles the consistency of mashed potatoes.

  Additional Information
Add a little water if the mixture seems too dry.
